What is stock?

Stock is a basic cooking ingredient made by simmering vegetables, animal bones, seafood, meat, and wine in boiling water to release aromas and nutrients. Stock comes in a number of varieties such as beef, chicken, vegetable and mushroom. Stock can be used in soups, stews, curries, and many other dishes to add flavour and form a sturdy base.

Is stock and broth the same?

Though the ingredients are similar, stock and broth do differ slightly. While stock is made primarily of animal bones, meaning more gelatine is released into the water creating a thicker mixture, broth uses much more meat. Stock is generally left to simmer for longer than broth, giving it a more powerful and intense flavour and broth is usually seasoned, whereas stock is left unseasoned to be used in a variety of dishes.

How do you make stock?

Making your own stock is relatively easy and is a great way of using up scraps and leftovers. Recipes can differ across the different types but generally, adding ingredients like animal bones, meat, vegetable scraps and herbs into a pot of boiling water and simmering is the standard method. Stock is an easy way to use vegetable scraps and peelings before putting them into the bin, giving them extra life before they get thrown away.
